The Middle Yorkshire breed, widely raised in Chiba Prefecture in the Showa 30s (1950s–60s), has been revived for the modern era, and by raising it carefully on a proprietary compound feed, the rich flavor that Japanese pork once possessed is conveyed to the present day. Unlike the common three-breed cross, the finely-grained meat quality unique to a pure breed produces a moist mouth feel. The fat is white with transparency — when it enters the mouth, an elegant sweetness and richness that spreads gently.
