Musashi Mugi Buta (Musashi Barley Pork), produced by Nagashima Pig Farm Co., Ltd. — which has accumulated a long history in Fukaya City, Saitama Prefecture — is a uniquely characterful brand pork raised on self-produced feed: wheat-derived food items such as bread, udon, ramen, and pasta collected from food factories in the Kanto area, heat-dried and processed at the company’s own factory, combined with rice milled for improved digestibility. It also attracts attention from a food waste utilization perspective. In rearing, piglets born in Tochigi Prefecture move at 2 months of age to farms in Saitama and throughout Kanto, raised slowly until meeting the shipping standard of 170 days of age and 115 kg. Growing up healthily without stress in a hygienically well-managed environment produces the meat quality unique to this pork. The greatest appeal of Musashi Mugi Buta is the richness of its meat quality. The loin core has finely-grained sashi (marbling), and with the first bite a gently spreading sweetness and rich lean umami can be enjoyed.
