Fujinokuni Hamanako Sodachi (Fujinokuni Hamana Lake Raised), nurtured on the shores of Lake Hamana, is a brand pork that has received Shizuoka-style brand pork certification — using lineage pigs uniquely developed by Shizuoka Prefecture. The core of the Shizuoka-style brand pork is the lineage pigs ‘Fuji York’ and ‘Fuji Rock’ developed over many years by Shizuoka Prefecture Livestock Technology Research Institute. Fuji York was completed in 1994 as a Large Yorkshire-line SPF lineage pig — Fuji Rock was completed in 1997 as a Duroc-line SPF lineage pig. Incorporating these two lineage pigs into the crossing is an important requirement for Shizuoka-style brand pork certification. Fujinokuni Hamanako Sodachi is a three-breed cross — Large Yorkshire-line Fuji York × Landrace female crossed with Duroc-line Fuji Rock male. The pig farming technology accumulated by Sanwa Chikusan Co., Ltd. since its founding in 1968, and the commitment to its proprietary compound feed, supports this brand. The feed is primarily corn, feed rice, and soybean meal — with thorough safety management without additives or antibiotics. The meat quality is finely-grained, with high water retention resulting in a juicy finish. Umami does not easily escape even after cooking — the softness stands out vividly in any preparation including tonkatsu and gyoza, of course. The track record of winning 1st place in the Taste Category at the 2000 Meat Industry Exhibition Brand Pork Favorability Contest also proves the high quality. The production location is Hosoe-cho, Kita Ward, Hamamatsu City. Approximately 3,600 head are shipped annually — distributed through Hamamatsu City Meat Market, then through designated sales stores certified by the Shizuoka-style Brand Pork Promotion Council.
