Dorobuta is a brand pork raised by completely free-range, 24-hour outdoor grazing across 30 hectares of El Paso Ranch in Makubetsu Town, Hokkaido. The name comes from the sight of the pigs running freely through fields and hills, and playing in the mud — a stress-free life in complete freedom. El Paso Co., Ltd., which raises these pigs, manages everything in-house from breeding through processing and shipment, delivering consistently high-quality pork to market. The breed is Camborough, of British origin — known for a firm, well-structured lean in excellent balance with the fat. The fat is rich in oleic acid, delivering a smooth, dissolving texture and an elegantly natural sweetness. The feed centers on naturally-derived nutrition including nuts, grass roots, and soil minerals, supplemented with Tokachi-grown kabocha pumpkin and long yam. Nourished fully by the gifts of nature, a wholesome, unfussy umami permeates the entire meat without any reliance on feed additives. Shipping age is 240 days — longer than most domestic pork — and the unhurried, patient rearing allows the musculature to develop firmly, producing a satisfying, full-textured eating experience.
