Kyoto Pork is a three-breed cross — Landrace × Large Yorkshire female crossed with Duroc male — one of Kyoto Prefecture’s authentic brand porks. In rearing, the rearing management manual established by Kyoto Prefecture is strictly followed — in the finishing stage of the late fattening period, a special feed blending 30%+ barley and bread crumbs is continuously given for 60+ days. This unique feed design is a major factor producing finely-grained, soft meat quality and deep umami. Shipping requires a sufficient period of 180+ days minimum (target 195 days) — only those that have grown to approximately 110 kg body weight and received a rating of ‘Standard’ or above from the Japan Meat Grading Association at Kyoto City Central Wholesale Market Second Market are certified and shipped as ‘Kyoto Pork.’ Having been managed under such strict quality standards, trademark registration was recognized in 2009 — and GI (Geographic Indication) protection system registration was also achieved in 2019 — both the quality and regional individuality are publicly highly evaluated. At rearing farms, proactive efforts toward Farm HACCP promotion are also made — the stance toward food safety and reliability is thoroughly maintained.
