Queen Pork is a brand pork that the Queen Pork Producer’s Association, based in Shirasawa Town, Numata City, Gunma Prefecture, has built up through years of patient accumulation of breed improvement and rearing management ingenuity. It is a three-breed cross — F1 sows from Landrace female × Large Yorkshire male, combined with Duroc male — with a breed composition characterized by finely-grained muscle fibers and well-proportioned fat deposition. In rearing, a designated compound feed is given continuously for 70 or more days before shipment, and wood vinegar (Clean Ace II) is added to the feed — firmly suppressing the distinctive off-odor easily sensed in pork. The result is a clean, refreshing flavor with no gaminess, highly regarded as a brand pork easy to eat for a wide range of generations from children to adults. In terms of meat quality, the high water retention means umami is rarely impaired after cooking — a practical advantage that also makes it easy to maintain deliciousness even when cooking the day after purchase. The fat is moist with a pleasant mouth feel, with the crispness and smoothness of texture felt with every bite.
