Rokkin Pork, born in Kamizato Town, Kodama District, Saitama Prefecture — in the lush north Saitama region — is a brand pork of committed devotion produced by Kibaramefarm. Representative Kazumatsu Kibarame practices integrated in-house management from feed formulation through to finishing, pursuing rearing that draws out the authentic umami of the pork to the maximum. The feed is a self-formulated blend primarily of corn, soybean, barley, rice, wheat, milo, and sweet potato, with vitamins, natto bacteria, and leaf mold added. Additives are limited to premix (vitamins), Stamigen (deodorization / meat quality improvement), and natto bacteria — antibiotics are not ordinarily used. Through the utilization of natto bacteria and leaf mold that regulate the gut environment, a clean pork of minimal off-odor is nurtured. Shipping is at 180 days of age and approximately 115 kg — a slower growth pace than standard pigs. This long rearing period brings a finely-grained, moist meat quality and beautiful marbling. The fat color is finished pure white, with sweet, high-quality fat melting into the lean — a rich flavor can be savored even in simple salt-grilling and stir-fry. The breed is LWD three-breed cross — Landrace female × Large Yorkshire male F1 crossed with Duroc male. The umami and marbling characteristics of Duroc accentuate the meat quality of Rokkin Pork. The primary slaughter site is Honjo Meat Center (Honjo City, Saitama Prefecture), with annual shipments of approximately 1,000 head — a small scale, but a designated retailer system is in place, managing distribution while protecting quality. For firmly enjoying the authentic sweetness and umami of pork, shabu-shabu, sauté, and tonkatsu utilizing the premium fat are recommended.
