Shinshu Sodachi Tateshina Mugi Buta (Shinshu-Raised Tateshina Wheat Pork), nurtured in the rich natural environment of the Tateshina area of Nagano Prefecture, is a brand pork that realizes a unique flavor and meat quality by giving a dedicated feed richly blending wheat grains in the late fattening stage. With Nagano Ken Nokyo Chokuhan Co., Ltd. as the managing body — a highly reliable Shinshu-produced brand pork with strictly designated production areas and farms. The Tateshina area, located in the highland zone of Nagano Prefecture and blessed with clear air and pure water, is a nature-rich environment suitable for pig farming. Pigs carefully raised at designated farms in the area, given a wheat-centered dedicated feed in the late fattening stage, have the defining characteristic of a fat with a high melting point — white, finely-grained, and clean fat quality. The breed is a three-breed cross — Landrace × Large Yorkshire female crossed with Duroc male — raised slowly to approximately 200 days of age and approximately 115 kg. Through long rearing days and slow growth, the texture of the meat is refined and the authentic umami of pork is concentrated. The lean of pigs raised eating wheat has a good firmness and does not easily harden even with heat — suited to a wide range of preparations including tonkatsu, shabu-shabu, and ginger pork stir-fry. With non-cloying, clean fat, it is also well-received as easy to eat even by those who dislike pork fat. Production and distribution is overseen by Nagano Ken Nokyo Chokuhan Co., Ltd., with Maruichi Sangyo handling primary wholesale — approximately 2,500 head are delivered to tables both within and outside Nagano Prefecture annually.
