Shinshu Olein Ton (Shinshu Oleic Acid Pork) is a brand pork managed and operated by Nagano Ken Nokyo Chokuhan Co., Ltd. in Nagano Prefecture. Its defining feature is that the content rate of ‘oleic acid’ — a monounsaturated fatty acid contained in pork fat — is confirmed individually with a dedicated measuring device, and only individuals that clear the self-imposed standard (45% or more) are permitted to bear the brand name. This initiative of proving quality numerically is widely evaluated as an advanced undertaking even within Japan — providing a reliable basis for consumers to purchase with confidence. For the feed, an original blend is adopted — corn, milo, and barley as the primary ingredients with Shinshu-grown brown rice added. By ingesting well-balanced, rich grain-derived nutrition, the pig’s oleic acid value naturally rises — the fat’s melting point lowers, producing a smooth melt-in-the-mouth feel. When prepared as shabu-shabu or tonkatsu, the non-cloying, clean sweetness of the fat stands out with every bite. Popular not only for home cooking but also as a gift. The breed is a three-breed cross — Landrace × Large Yorkshire female crossed with Duroc male — raised slowly over approximately 200 days. A certificate noting the production farm, identification number, and oleic acid measured value is issued for each shipped pig — the peace of mind of being able to trace production area information all the way to the table is also a major appeal. Annual shipments are limited to approximately 3,000 head — a brand of high rarity value.
