Waton Mochibuta is a brand pork produced by Global Pig Farm Co., Ltd., headquartered on the slopes of Mount Akagi in Shibukawa City, Gunma Prefecture. In 1985, the founding pig was discovered in the United States, brought back to Japan, and subjected to independent breed improvement — with ‘Waton Mochibuta’ born in 1992. A major defining feature of this brand is its consistent integrated rearing management from the grand-grandparent (GGP) level — rare even within Japan. By managing and selecting its own unique crossbreed — three breeds with differing characteristics combined — from the GGP stage, quality stability and improvement are consistently pursued. Only carefully selected, outstanding pigs become breeding pigs — the thoroughgoing commitment to quality is the very foundation of this brand. The feed uses high-quality proprietary designed feed based on natural ingredients including corn. Nutritional balance is controlled through several types of special feed tailored to the growth stage, raised in a healthy, low-stress environment. The result is a glutamic acid (umami component) content and a Vitamin E (preventing fat oxidation) content approximately 4 times that of standard domestic pork — realizing a rich, long-lasting umami meat quality. Waton Mochibuta born in this way is characterized by a soft, finely-grained meat quality and a lightly melting fat. In shabu-shabu, the clean fat and deep richness can be savored; in tonkatsu, the unity with the coating is outstanding.
