This is premium pork that slowly matures a brand pork using ‘Yukimuro’ (snow cellar) — a traditional preservation technique cultivated by the snow country culture of Niigata. A yukimuro is a natural storehouse utilizing large quantities of snow. The interior maintains a stable environment of around 1–2°C year-round with humidity of 90% or more — these conditions of low temperature, high humidity, and low oxygen slowly work the enzymes, deepening the umami and tenderness of the meat. Yukimuro Jukusei Koganebuta (Snow-Cellar Aged Golden Pork) is an upper-grade brand in which the Koshino Koganebuta raised in the Murakami and Tainai area of Niigata Prefecture has been slowly snow-aged in this yukimuro. Koshino Koganebuta is a three-breed cross — Landrace × Large Yorkshire female crossed with Duroc — carefully fed a special feed centered on carefully selected corn, wheat, and brown rice tailored to each growth stage. Shipping age is 180 days — by setting this slightly longer than standard, the meat’s umami is abundantly accumulated. Pork that has undergone yukimuro aging has a lower fat melting point — a softness that gently settles in the mouth when eaten is born. With the increase of umami amino acids, the sweetness and mellowness stand out — never tiring no matter how many times it is eaten, a flavor of great depth. Best savored in simple preparations such as steak and salt-koji grilling that fully bring out the ingredient’s flavor — also widely applicable to shabu-shabu, ginger pork stir-fry, and stir-fry dishes. Managed by Woshoku Co., Ltd. (Chuo Ward, Niigata City) — annual shipments approximately 3,000 head, a rare specialty.
