Raised by the pure streams of the Kirishima range — a Miyazaki brand pork finished with shochu lees.
Takajo no Sato is a Japanese brand pork (meigara-buta) from Takajo-cho, Miyakonojo City, Miyazaki Prefecture, managed by Nippon Clean Farm Co., Ltd. — Kyushu Office. Breed / crossbreeding: Female Hypor × Male Hypor Duroc.
Miyakonojo City, Miyazaki Prefecture, is a region known as the very ‘town of livestock’ — boasting top-class national livestock production value combining cattle, pigs, and poultry. The brand pork nurtured by that fertile earth and clear water welling from the Kirishima mountain range is ‘Takajo no Sato’ (Takajo Village). At designated farms of Nippon Clean Farm Co., Ltd. — the pigs are carefully raised together with the producer’s passionate commitment.
The defining characteristic is the unique committed feed — adding Miyazaki’s specialty shochu lees to feed limited to plant-based ingredients only. Shochu lees born in the shochu manufacturing process are said to have the effect of assisting the pig’s digestion and regulating the intestinal environment. By this feed, excess fat is suppressed — a clean, healthy pork is born.
When you actually eat it — there is minimal scum, and a clear flavor spreads throughout the mouth — the clean aftertaste is also impressive. The non-cloying, refreshing meat quality pairs perfectly with a wide range of preparations including shabu-shabu and ginger pork stir-fry — a specialty that the family will be pleased with every time it appears on the table.
The breed is a cross of Hypor with Hypor Duroc — characterized by meat quality with appropriate marbling and lean balance — satisfyingly fulfilling. By raising over the slow average rearing period of 200 days — deep flavor and firm umami are drawn out. With both trademark registration and brand regulations put in place in 2010 to firmly back its quality — a trustworthy specialty that can be put in the mouth with confidence. If looking for a Miyazaki brand pork — please do choose ‘Takajo no Sato.’
