Raised in the land of Yamagata — a certified brand pork proud of its strict standards.

Nintei Yamagata Buta is a Japanese brand pork (meigara-buta) from Yamagata Prefecture, managed by Yamagata Prefecture Meat Corporation. Breed / crossbreeding: Female (Landrace × Large White) × Male Duroc.

Nintei Yamagata Buta (Certified Yamagata Pork), raised slowly in the rich nature of Yamagata Prefecture, is a brand pork certified by Yamagata Prefecture Meat Corporation under its own strict screening standards. The breed is LWD (three-breed cross), born from Landrace × Large White sows with the meat-quality-renowned Duroc as the sire.

The pigs are given a well-balanced feed primarily based on corn and cereal grains such as barley and wheat and raised slowly over a standard-exceeding 170 days, and the lean develops a finely grained, springy elasticity, and the fat is finished to a juicy richness brimming with sweetness and depth. The clean, pure soft water of snowmelt sourced from Yamagata’s mountains, and the natural environment of four distinct seasons surrounding the farm — these form the foundation for the rich flavor unique to this pork, as it grows healthily under the loving care of skilled producers.

In addition to standard grading criteria, Yamagata Prefecture Meat Corporation has established proprietary standards for ‘carcass weight’ and ‘backfat thickness,’ and only pigs that meet both criteria are given the name ‘Nintei Yamagata Buta.’ This brand, reflecting a commitment to quality management in every aspect, is authorized to use the prefecture-recommended character mark ‘Perorin’ — a major appeal in terms of consumer trust. The soft, juicy meat quality pairs especially well with shabu-shabu, making it the perfect choice for savoring the umami of the ingredient simply and directly. Please do try the genuine flavor born of Yamagata’s land and the passion of its producers.
