Bishuton (Bishu Pork) is a committed brand pork produced by Sugimoto Shokunikku Sangyo Co., Ltd., headquartered in Nagoya City, Aichi Prefecture. The name derives from ‘Bishu’ — the place name long referring to Aichi Prefecture — proudly raised by a long-established meat company that has supported Nagoya’s meat culture. A designated compound feed is used in production — quality stability and safety are thoroughly and relentlessly pursued. The crossing system is an LWD three-breed cross — Landrace × Large Yorkshire female crossed with Duroc male — a breed composition outstanding in the balance of meat quality and fat quality. By setting the standard of 175 days of age and 105–120 kg body weight at shipping, uniform meat quality is realized. The defining feature of Bishuton is its well-balanced flavor. While carefully drawing out the umami of the meat, the fat has a subtle sweetness — while a non-cloying, clean finish can also be enjoyed. The minimal characteristic pork off-odor and the ability to directly feel the authentic flavor of the ingredient are highly evaluated even by many meat professionals. Slaughter is at Nagoya City Meat Market — approximately 2,400 head are shipped annually. In September 2009, trademark registration and brand standards were established — the reliability as a brand was confirmed. Subsequently, Farm HACCP obtained in 2018 and JGAP in 2021 — a production system compliant with domestic and international food safety and environmental standards has been steadily built.
