Tobiume Buta (Flying Plum Blossom Pork) is a Kyushu brand pork managed by Nihon Shokuhin Co., Ltd., headquartered in Koga City, Fukuoka Prefecture. Slowly and carefully raised in Kyushu’s nature-rich environment — finished to 115–120 kg within a rearing period of 210 days or less. A dedicated feed blending milo, bread crumbs, corn, wheat, soybeans, shochu lees, and rice in a unique formulation ratio is used for the feed. The feed formulation incorporating shochu lees is one of the major characteristics of Tobiume Buta — said to have the effect of strongly drawing out the authentic umami of pork. The breed is an LWD three-breed cross — Duroc male crossed with Large Yorkshire × Landrace female — outstanding in the balance of meat productivity and meat quality. The springy texture and gently spreading sweetness are produced by the combination of this breed and the dedicated feed. The high quality is also proven at competitions — boasting the glorious achievement of winning consecutive gold awards at the 49th and 50th West Japan Area Pig Carcass Shows. Brand standards, Farm HACCP, and JGAP all obtained — quality management system is also perfect — a brand pork that can be welcomed to the table with confidence. The brand pork history is also long — the trademark registered in December 1960 is an established brand of distinguished history. In shabu-shabu, the gently spreading umami of the shoulder-loin can be firmly felt — in yakiniku, the sweetness and softness of the fat stands out.
