Buono Pork Gifu

A marbled pork born in Gifu Prefecture. Born of the prefecture’s own developed breed ‘Bono Brown’ — a supreme cut of concentrated umami and sweet fat.

Buono Pork Gifu is a brand pork unique to Gifu Prefecture — born by using the special breeding pig ‘Buono Brown’ developed by Gifu Prefecture in the crossing. The brand name means ‘delicious (buono)’ in Italian — a pork committed to the flavor of the ingredient, true to its name. Buono Brown is a Duroc-line breeding pig — developed by Gifu Prefecture Livestock Research Institute through DNA analysis to strictly select individuals with gene regions related to marbling ratio. Through the characteristics of this breeding pig, the marbling ratio of Buono Pork Gifu reaches approximately twice that of standard pork. Only carcasses that clear ‘2 or more’ on the marbling ratio judgment table uniquely numerically standardized by Gifu Prefecture receive certification — high quality uniformity is also maintained. At contract farms within Gifu Prefecture, a dedicated feed jointly developed by Gifu Prefecture and Nippon Nosan Kogyo Co., Ltd. — certified by the council — is given. This feed is a proprietary formulation blending plant-based ingredients richly containing antioxidant components and oleic acid, with amino acid balance also finely adjusted. While suppressing pork fat oxidation, the sweetness and richness are slowly drawn out. Pork raised approximately 180 days in this way has minimal drip loss — the characteristic of firmly retaining umami even after cooking. Savoring the ingredient’s sweetness in simple shabu-shabu of course — in yakiniku and tonkatsu as well, the deep, rich flavor of the authentic pork can be savored. 21,000 head are shipped annually — distributed primarily within Gifu Prefecture.
