Daijo Buta is a self-branded pork produced by Meat Center Kikuchi Livestock, a specialty meat retailer in Hokota City, Ibaraki Prefecture, founded in 1953. With a self-owned farm, Kikuchi Pig Farm, located in Hokota City — where the Pacific Ocean, Lake Hinuma, and Lake Kitaura meet and the refreshing sea breeze of Kashima-nada blows through — approximately 4,000 pigs are currently raised at 2 farms. Of the approximately 500 head shipped each month, only those with particularly outstanding fat attachment and lean meat quality — selected at 3 stages from piglet days through to carcass checks by staff and seasoned professionals — can bear the brand name ‘Daijo Buta.’ This rigorous selection means only approximately 10% of all pigs qualify. The breed is LWD three-breed cross — Landrace, Large Yorkshire, Duroc — fattened slowly over 180–200 days. The feed uses a pellet-form proprietary compound of 6–7 ingredients including barley. By crushing the pellets even finer for ease of eating, digestion and absorption are promoted, nurturing a high-quality fat with minimal off-odor and both sweetness and umami. The fat has a refreshingly clean sweetness, and the lean is finely-grained and tender — with the additional advantage of not hardening easily with heat, making it highly cookable. Kikuchi Livestock is also a long-established local specialty meat retailer with over 70 years of history, and its self-owned store’s signature ‘tokkuri char siu’ and menchi katsu have long been beloved by local customers.
