Shimonita Pork Kome Buta (Shimonita Pork Rice Pork), produced by Shimonita Meat Co., Ltd., which operates its own farm in Annaka City, Gunma Prefecture, is a brand pork raised by a proprietary fattening method utilizing domestically-grown feed rice. By adding domestically-grown feed rice at 5% or more to the feed for the 2 months of the fattening period, a natural sweetness is born in the fat, producing a pork with minimal off-odor and a clean, easy-to-eat character. The breed is a three-breed cross of Large Yorkshire, Landrace, and Duroc, with uniformity throughout the year realized by carefully selecting and unifying superior breed lines. The meat quality is characterized by a high lean content and good fat firmness — a carefully balanced spread of moderate marbling and appropriate fat content fills the mouth. This pork pairs especially outstandingly with shabu-shabu — even after blanching, little scum rises, and the umami of the ingredient is so concentrated that the soup after boiling can be enjoyed directly with just salt and pepper, surprising first-time eaters. Also, in pork sukiyaki, the elegant sweetness and clean finish stand out, with a deep, never-tiring flavor that can be enjoyed again and again. The use of feed rice also connects to the effective utilization of fallow and abandoned farmland — the practice of circular agriculture in which rice farmers and livestock farmers work together is another appeal unique to this brand pork. In hygiene management, Annaka Farm obtained Farm HACCP in March 2018, and the 1st and 2nd farms of Agatsuma Farm in December 2023 — safe, reliable pork produced under thorough quality management, delivered to the table with full confidence.
