Jukusei Biton (Aged Beautiful Pork) is a brand pork produced by Kubo Chikusan Co., Ltd., based in Yoneyamacho, Tome City, Miyagi Prefecture. The breed is an LBD three-breed cross — Landrace female × Berkshire male mother sow, with Duroc as the sire — with a commitment to pure bloodlines at the core of this brand’s production. While the typical commercial pig is shipped at around 180 days, Jukusei Biton is raised patiently to 210 days. This extended fattening period is a major factor in the slow, thorough development of the umami of the meat and the sweetness of the fat. The feed is a designated compound using corn as the primary ingredient, with production under stable quality management. The most distinctive feature of Jukusei Biton is the near-complete absence of the characteristic off-odor of pork. With excellent moisture retention, the meat stays juicy even after cooking, while also having the practical advantage of good shelf life. After slaughter, the carcass is aged under refrigeration for a set period — a process that further enhances the sweetness of the fat and the firmness of the meat — and the word ‘aged’ (jukusei) in the brand name is derived precisely from this distinctive production method.
