The Junsui Kinkaton (Pure Jinhua Pig) raised with devoted care by Keiyu Farm in Higashine City, Yamagata Prefecture, is an exceptionally rare brand pork within Japan — a pure Jinhua Pig, bred true to its original bloodline originating in Zhejiang Province, China. Jinhua Pig is globally known as the source pig for ‘Jinhua Ham’ — one of the world’s three great hams — and many will have heard the name. Even within China, the number of these pigs has plummeted dramatically, and the breed has been designated as a nationally protected species; within Japan, rearing is confined to only a handful of farms. Compared to standard commercial pigs, growth is slow — with approximately 300 days taken before shipment. Keiyu Farm’s rearing philosophy involves giving the pigs a restricted ration of a proprietary feed formulation, slowly concentrating the authentic umami of the pork over this long rearing period. The meat quality is finely-grained and delicate, and the fat has a smooth, oleic acid-rich texture of premium quality. The light umami that spreads the moment the meat touches the palate, and the sweetly melting fat that slowly dissolves in the mouth, will unmistakably convey the clear difference between this and any other pork to those who taste it.
