Sandaime Maruyamaton

A two-way cross of Berkshire and Duroc, raised for over 220 days — a rare brand pork celebrated for the brilliant whiteness of its fat.

Sandaime Maruyama-ton (Third-Generation Maruyama Pork) is an original brand pork created jointly by the Maruzu Group — which operates tonkatsu restaurants ‘Katsu-maru’ and ‘Maruyama’ centered on Fukushima Prefecture — and Inamura Farm Co., Ltd. in Ota City, Gunma Prefecture. It is a two-breed cross of the Berkshire — known as a black pig — and the brown-coated Duroc, drawing out the advantages of both in a rare combination seldom encountered in the market. The commitment in rearing comes down to two main points. One is the continuous giving of a dedicated feed blending seaweed powder, sweet potato, garlic, and Vitamin E from approximately 120 days of age through to shipment. The other is the fattening over approximately 220 days — taking much more time than the standard commercial pig shipping age of 150–160 days. The meat produced by this extended rearing has no characteristic pork off-odor, with umami firmly accumulated in the lean. The fat in particular is so pure white and beautiful that the producers themselves describe it as ‘shiromi’ (white meat) — the sweetness that melts out with just a little heat and the elegant umami are something special. While also retaining the authentic chewing resistance and crispness of pork, the umami of the meat juices spreading with every chew is a flavor impossible to forget once tasted. Annual shipments are extremely limited at approximately 850 head, available only through the stores of the Maruzu Group and the online shop ‘Maruzu Store.’ In tonkatsu of course, but also in shabu-shabu and kakuni (braised pork belly), the sweetness of this pork’s pure white fat and juicy umami can be savored to the fullest.
