The defining feature of Shinshu A Pork is the addition of domestically-grown feed rice to the feed in the late fattening stage. By adding domestic rice to the feed, the oleic acid content rises within the pig’s body, reducing the characteristic pork off-odor. Oleic acid is a component that positively contributes to the sweetness and fragrance of the meat — making the pork more delicious and easy to eat. On daily tables as well, without concern about off-odor, it can be confidently enjoyed by everyone from children to the elderly. Also, appropriate fat enters the meat cleanly throughout — producing a finely-grained, moist texture.
