Shinshu A Pork is a brand pork managed by JA Zen-Noh Nagano Prefecture Headquarters, based in Nagano Prefecture. Under the rich natural environment of Shinshu — surrounded by the majestic Alps mountains — it is a committed pork raised only at farms that have cleared strict production standards. The defining feature of Shinshu A Pork is the addition of domestically-grown feed rice to the feed in the late fattening stage. By adding domestic rice to the feed, the oleic acid content rises within the pig’s body, reducing the characteristic pork off-odor. Oleic acid is a component that positively contributes to the sweetness and fragrance of the meat — making the pork more delicious and easy to eat. On daily tables as well, without concern about off-odor, it can be confidently enjoyed by everyone from children to the elderly. Also, appropriate fat enters the meat cleanly throughout — producing a finely-grained, moist texture. The appeal is juicy meat juices overflowing with every chew, and a clean, refreshing finish — delicious not only in shabu-shabu and sauté but also in tonkatsu with a juicy frying result. The breed is a three-breed cross — Landrace × Large Yorkshire female crossed with Duroc male — an excellent combination balancing meat quality and meat productivity. Shipping is at approximately 180 days of age, body weight 110–120 kg — slaughtered at Nagano Prefecture Meat Corporation and distributed through JA Zen-Noh Nagano Prefecture Headquarters.
