Shinshu Taro Pork, produced by P.O.K. Co., Ltd., based in Minamiminowa Village, Kamiina District, Nagano Prefecture, is a brand pork nurtured by the beautiful Shinshu landscape. Fattening is handled by Taro Farm — a long-established pig farm founded in 1950. Drawing on many years of pig farming know-how, thorough health management of each individual pig is maintained while raising each with devoted care. The breed is a three-breed cross — (Landrace × Large Yorkshire) female crossed with Duroc male. Combining the rich umami unique to Duroc with the high meat productivity of Landrace and Large Yorkshire, the meat quality balance is outstanding. Pigs carefully raised on a designated dedicated feed have a non-gamey, clean flavor with no unnecessary off-odor. When eaten, the first thing that surprises is the sweetness of the fat. The fat that softly melts in the mouth and the finely-grained, springy-textured lean harmonize exquisitely — the sweetness and umami spreading with every chew. Difficult to harden even when cooled with high water retention — delicious not only in shabu-shabu and cold pork shabu-shabu salad drawing out the ingredient’s flavor, but also in sauté and tonkatsu. The high quality is proven by winning the Excellence Award (3rd place) at the 2016 National Brand Pork Favorability Contest. Trademark registered in 2016 as well. Annual shipments are rare at approximately 4,000 head — distributed primarily through Nagano Prefecture Meat Corporation Matsumoto Branch.
