Rokkoku Otome Buta, with Ibaraki Prefecture as its primary production area, is a brand pork whose name embodies the commitment to selecting and shipping only female pigs. As the name ‘otome’ (maiden) suggests, all pigs shipped are exclusively female — and this selection criterion is the greatest distinction from other brand porks. In general, female pigs tend to have more finely-grained muscle fibers and are less prone to the characteristic off-odor of pork compared to castrated males. To further draw out this premium meat quality unique to female pigs, an original feed made from six grains with a high barley content is used. A designated compound feed balanced with wheat, barley, rice, corn, milo, and soybean is given, nurturing a deep, grain-derived umami and elegant richness within the pork. The breed is a three-breed cross — Duroc male with Landrace female × Large Yorkshire male female sow — raised carefully to approximately 180–190 days. The management body is I-Pork Co., Ltd. (Ito Ham-Yonekyu Holdings Group). With annual shipments limited to approximately 9,000 head, it is not always easy to come by — so when you see it, please do pick it up. The fat is brilliant white and clean, and when eaten, a natural grain-derived sweetness and mellow richness spread through the mouth, with a refreshingly clean finish.
