The phantom purebred born of Tokyo — a brand pork celebrated for its finely-grained meat and the refined, elegant sweetness of its fat.

TOKYO X is a purebred pork strain developed by the Tokyo Metropolitan Livestock Experiment Station after seven years of selective breeding beginning in 1988. Combining the outstanding traits of three breeds — Beijing Black Pig, Berkshire, and Duroc — it was officially registered as a new strain with the Japan Swine Breeders Association (now the Japan Swine Producers Association) in 1997. Today it is managed by the TOKYO X Production Association, with farms located not only in Tokyo but also in Miyagi, Ibaraki, Gunma, and Yamanashi prefectures. Its greatest distinguishing feature is the finely-grained, silky meat quality and a premium fat that releases a sweet, nut-like fragrance when heated. The lean and fat are beautifully integrated, with a clean, refreshing aftertaste that leaves no lingering heaviness. It contains approximately four times the Vitamin B1 of standard pork, making it nutritionally exceptional as well. The feed consists of non-GMO, post-harvest-free corn and soybean meal as the primary ingredients, with a dedicated compound feed given for more than three months before shipment to enhance fat quality. Raised over approximately 210 days in a spacious, stress-reduced environment under four core principles — Safety, Biotics, Animal Welfare, and Quality — the annual shipment of 8,000 head is deliberately kept rare. Individual ear-tag management and DNA-based origin verification are also conducted, reflecting the producer’s uncompromising commitment to quality. TOKYO X is at its finest in preparations that let the ingredient speak for itself: shabu-shabu, stir-fried vegetables, or char siu pork.
