Born of the gifts of grain — a brand pork with three qualities in one: zero off-odor, light fat, and good shelf life.

Enshu Yume-no-Yume Pork is a Japanese brand pork (meigara-buta) from Hamamatsu City, Shizuoka Prefecture, managed by Kawai Chikusan. Breed / crossbreeding: Female (Landrace × Large White) × Duroc (LWD triple cross).

Enshu no Yume no Yume Pork (Enshu Dream of Dreams Pork), carefully raised by Kawai Chikusan in the mountains of Hamamatsu City, Shizuoka Prefecture — is a brand pork born from the pursuit of the ideal pork, as though layering the producer’s dreams one on another — true to its name. The defining feature is the light, clean melt of the fat.

While many may feel pork fat is heavy, Enshu no Yume no Yume Pork is raised on a dedicated feed blending 20% or more cereal grains such as barley and wheat — resulting in fat with a clean, refreshing texture. Without feeling cloying in the mouth, the umami of the ingredient itself can be gently enjoyed. The minimal characteristic pork off-odor is also one of the major appeals.

Easy to use in cooking without needing to worry about pre-preparation — not only in shabu-shabu and ginger pork stir-fry, but even in simple salt and pepper sauté, the high quality is conveyed directly. Furthermore, the good shelf life is also a pleasing point for consumers. With freshness maintained for a long time, it can be confidently incorporated into tables even after purchase.

The cross is an LWD three-breed cross — Landrace × Large White female crossed with Duroc male. Raised slowly over 190 days — only those reaching a shipping weight of 105–110 kg are shipped as ‘Enshu no Yume no Yume Pork.’ A historical brand with trademark registered in 2001 — while maintaining production of 1,800+ head annually, it is cherished regionally as a brand pork representing the Hamamatsu area. Please do savor at your table the flavor also called ‘phantom pork.’
