Chami Ton, managed by JA Kagoshima Prefecture Economic Federation, is a representative brand pork of Kagoshima. As a new brand following Kagoshima Kurobuta (black pig) — trial rearing began in 1994 — after dedicated feed development, officially started as a brand in 1997. The key point of rearing is the dedicated compound feed given for approximately 2 months before shipping. This feed blending catechin contained in Kagoshima-produced green tea powder, corn, milo, and sweet potato (or cassava) creates the meat quality unique to Chami Ton. The antioxidant action and deodorizing action catechin has suppresses meat oxidation — finishing with a clean, refreshing flavor with minimal characteristic pork gaminess. Also, compared to standard pigs — richly containing inosinic acid and Vitamin E as umami components, and also richly containing linoleic acid and linolenic acid with cholesterol-lowering action — pork that can be picked up with confidence by health-conscious people as well. Finely-grained loin with appropriate fat is ideal for ginger pork stir-fry and pork sauté — shoulder loin with exquisite fat and lean balance is perfect for shabu-shabu and grilled pork. At farms in the production area, the voice, facial expression, and movement of each pig is confirmed daily — carefully raised in a comfortable environment not causing stress. Under strict Kagoshima brand standards quality management — a stable supply system of 240,000 head annually is also in place — easily purchasable at supermarkets and via mail order.
