Tozawa Village in Mogami District, Yamagata Prefecture, is a naturally rich mountain village through which the Mogami River — one of Japan’s three most rapid rivers — flows magnificently. In this blessed landscape, Yamagata Tozawa Farm Co., Ltd. raises with devoted care ‘Tozawa Buta Ichiban Sodachi.’ The breed is a three-breed cross of SPF Landrace × Large Yorkshire sows with the marbling-renowned Duroc — a shipping age of 170 days that draws out the authentic umami of the pork fully. The defining appeal of this brand pork is a lean with minimal off-odor and a tender texture, and a brilliantly white fat with a sweetness and umami all its own. The feed uses a proprietary blend of barley as the primary grain, with seaweed, milo, and other additions, further incorporating oligosaccharides to support gut health — suppressing the characteristic pork off-odor at its root. The prominence of the ingredient’s authentic deliciousness is a direct result of this meticulous attention to the feed. All barns are windowless, with year-round stable temperature management maintained, deodorizing equipment installed, and all-in, all-out disinfection and drying rigorously practiced — maintaining a consistently clean hygiene environment. In 2024, JGAP (Good Agricultural Practice) certification was obtained, establishing traceability from rearing history through to shipment.
