Echigo Kome Buta ‘Koshio’ (Echigo Rice Pork — King of Echigo) is a fully locally-produced brand pork produced by Woshoku Co., Ltd. — a meat wholesale company in Niigata Prefecture. Utilizing feed rice grown on the Echigo earth, it is widely beloved by restaurants and hotels as a pork with rich sweetness and elegant umami. The name ‘Koshio’ (King of Echigo) embodies the aspiration to reach the pinnacle of Niigata (Echigo) pork. Prefecture-produced feed rice cultivated on the fertile land created by the two major rivers — Shinano River and Agano River — is finely crushed as nutritionally-rich brown rice and added to the compound feed. By giving feed rice during the approximately 2-month finishing period, the oleic acid content — which brings sweetness to pork — rises. A melt-in-the-mouth sweetness and clean finish is born — enjoying a non-cloying premium flavor. The breed is a three-breed cross — Landrace × Large Yorkshire female crossed with Duroc male. Raised for approximately 180 days in a comfortable environment of thorough hygiene management without stress — shipping weight controlled to approximately 110–115 kg. Woshoku Co., Ltd. strictly checks the meat quality of each individual — only those meeting the standard are shipped as brand pork. In tonkatsu, the sweetness and umami stand out well — in shabu-shabu, a clean, refreshing texture can be enjoyed.
