Hachimantai Pork is a brand pork produced with integrated in-house management by Hachimantai Pig Farming Cooperative Agricultural Corporation, based in Kazuno City, Akita Prefecture. The farm is set in a naturally rich environment adjoining Towada-Hachimantai National Park, where pigs are raised on pure air and natural water containing minerals. The breed is ‘Hypor Pig (BioHypor),’ developed in the Netherlands — whose finely-grained lean and high-quality fat, born from a bloodline distinct from the standard three-breed cross, are among its greatest features. The cooperative holds the belief that ‘healthy pigs are the foundation of delicious pork,’ and maintains a production system that raises pigs from birth through to shipment entirely within its own farm. A closed rearing environment with minimal external contact makes medication-free, antibiotic-free rearing possible. The farm has a resident veterinarian who provides individual, fine-grained support for the hygiene and health conditions of each facility. The feed uses a plant protein-centered compound formulated for each growth stage, with the addition of high-compression, approximately 130°C heat-treatment ‘expander processing’ to produce a clean, easily digestible state. As a result of this thoroughgoing management, the Japan Livestock Products Grading Association’s grading consistently maintains a superior and standard quality ratio of 90% or more. The meat quality has no off-odor, is tender, and retains its texture even when cooled — a welcome feature for home cooking. The fat has a clean, mellow richness, versatile in preparations from shabu-shabu to stir-fry. At the direct sales outlet ‘Dear Pork,’ a full range of processed products including ham and sausage is also available.
