Fukui Pork

Raised on lactic acid bacteria feed — a Fukui brand pork of finely-grained, juicy meat quality and richly satisfying flavor.

Fukui Pork is a brand pork produced in Fukui Prefecture. Produced with a three-breed cross — Landrace × Large Yorkshire crossbred female crossed with Duroc male — widely known for the defining characteristics of finely-grained, taut, and soft meat quality. Shipping age managed at around 180 days, shipping weight approximately 130 kg — quality stability is pursued by unifying the breeding pig supply source. In rearing, a dedicated feed with lactic acid bacteria added to regulate the gut environment is given. By maintaining gut health, stress is reduced — safe, reliable rearing with antibiotic use suppressed to the maximum is realized. This devoted management is the reason for a meat quality of excellent water retention with minimal drip loss, and an elegant sweetness of fat. Also richly containing quality protein and Vitamin B1 in nutritional aspects. Fukui Pork produced at pig farming households in Fukui Prefecture is slaughtered at Kanazawa Shokunikku Ryutsu Center, then distributed to specialty meat shops and restaurants throughout the prefecture through JA Fukui Prefecture Keizairen. Annual shipments approximately 1,500 head — a brand pork of high rarity value. The sweetness and umami of the fat stand out vividly even in simple salt and pepper sauté — the flavor can also be fully savored in shabu-shabu and hot pot dishes. Even in tonkatsu, the authentic deliciousness of pork can be firmly enjoyed. Production was temporarily halted due to the impact of Classical Swine Fever (CSF), but shipments resumed in August 2023 — once again enriching tables as a brand pork representing Fukui Prefecture.
