Gujo Classic Pork is a brand pork carefully raised at Gujo Meiho Farm in the mountains of Gujo City, Gifu Prefecture. Located in the upper reaches of the Nagara River — this land is blessed with the clear water of the Yoshida River and pure air, with a rich natural environment. The defining feature is that classical music — including Mozart — is played in the barn while the pigs are raised. Mozart’s compositions have a tempo close to the resting pulse of humans, said to have a relaxing effect. By the producers themselves approaching work with a calm mind, stress on the pigs is minimized to the absolute maximum — a free-roaming rearing environment is realized. Hygiene management is also thoroughgoing — with restrictions on outside visitors and mandatory wearing of dedicated clothing and boots, the risk of disease intrusion is completely eliminated. A high piglet growth rate of 98.5% compared to the national average of 94.5% is also the pride of this farm. The feed richly blends high-quality wheat grains and cereals — raised slowly over 165–200 days. The three-breed cross pigs are characterized by a finely-grained meat quality and soft texture. The fat has a sweet, clear flavor — of such premium quality that scum is minimal. Of course enjoyable simply grilled with only salt — in French traditional technique-inspired confit and sausage as well, the ingredient’s character stands out. Approximately 7,000 head are shipped annually — available for purchase at Feel stores and others within Gifu Prefecture.
