Produced at Donan Agro Farm in Mori Town, in the south of Hokkaido overlooking Mount Komagatake, ‘Hokkaido Sodachi Hikoma Buta’ takes its name from the producer Hiasa’s ‘Hi (日)’ and ‘Ko (駒) from Komagatake, Ma (森 = Mori Town).’ Raised on a farm certified by the Japan SPF Pig Association as an SPF pig farm (pigs free of specific pathogens), the farm maintains thorough hygiene management under three strict conditions: geography, rearing, and sanitation. The breed is a three-breed cross — Landrace female × Large Yorkshire male sows with Duroc boars — with shipment limited exclusively to female pigs. The defining characteristics are a finely-grained, tender meat quality and a noticeably delicate sweetness in the fat, with a rich content of oleic acid — the umami component. With a tendency to produce minimal scum, the authentic umami of the ingredient can be enjoyed directly in shabu-shabu and hot pot. With approximately 21,000 head shipped annually and export records including Hong Kong, this is one of Hokkaido’s leading brand porks. Available to order nationwide through the official online shop and furusato nozei (hometown tax donation) platforms, making it easy to enjoy even outside Hokkaido. The feed is an original blend of barley and rice in proprietary ratios, with added measures to enhance oleic acid content — served warm-softened with water after heat sterilization to reduce digestive burden on the pigs and draw out a superior, off-odor-free meat quality.
