Hokorobuta is a brand pork raised freely in a vast farm in Asahi City, Chiba Prefecture. This brand pork — produced by Shimoyama Farm Co., Ltd. — is committed to creating a large-group rearing environment where pigs can exercise sufficiently. From the belief that growing up healthy in a low-stress environment directly leads to the deliciousness of pork, the pigs are carefully raised in spacious surroundings. The feed intentionally suppresses the corn blend commonly used in standard pork production, instead using grains rich in starch such as barley and milo (sorghum). Milo is known as a grain richly containing monounsaturated fatty acids including oleic acid — through this feed design, Hokorobuta is finished to a meat quality with high-quality fat of excellent oleic acid balance. The mouth feel is soft, with a clean, non-cloying sweetness felt. Furthermore, by strengthening Vitamin E in the feed, the oxidation of the pork is suppressed and freshness retention capability is elevated — also a major defining feature. The antioxidant action of Vitamin E maintains vivid color even after purchase, allowing confident use in home cooking as well. Shipped at 185 days of age and 115 kg — by allowing full maturation, a deep umami is drawn out. The cross is Landrace × Large Yorkshire sow with Duroc — LWD line — with annual shipments of approximately 15,000 head. Processed at Tosho Town Meat Center in Chiba Prefecture, with Farm HACCP obtained in 2015 — a reliable system in place for hygiene management as well.
