Imoko Buta (Sweet Potato Pork), raised at Rex Farm spread on the foothills of Kirishima Mountain in Ebino City, Miyazaki Prefecture, is a brand pork carefully raised on a dedicated compound feed blending ‘Ebino rice’ cultivated by local farmers exclusively for feed, and sweet potato shochu lees from the local sake ‘Meigetssu.’ The shochu lees born from the sweet potato variety ‘Kogane Sengan’ are richly containing lactic acid bacteria — having the function of regulating the pig’s intestinal environment while promoting healthy growth. By that effect, the characteristic pork off-odor is firmly suppressed — the mouthfeel when eaten is remarkably soft, with a clean, good-aftertaste finish of the fat as well. Also, the clear water of the Kirishima mountain range and the blessed environment of nature-rich Ebino City firmly support the pig’s health — nurturing a premium meat quality with balanced muscle and fat. Raising slowly over 185 days — the umami of the meat slowly concentrated is also one of the appeals of Imoko Buta. The fat is refreshingly clean without cloyingness — with the characteristic of not easily hardening even after heating — useful not only in shabu-shabu and hot pot but also in daily preparations such as ginger pork stir-fry and pork rice bowl. The breed adopts a three-breed cross — Duroc crossed with a Landrace × Large Yorkshire female — pursuing the compatibility of umami and softness.
