Koedo Kurobuta (Koedo Black Pork) is a pure black pig lovingly raised for over 40 years in Kawagoe City, Saitama Prefecture — a historic city known as ‘Koedo’ (Little Edo). Produced by Ohno Farm Co., Ltd., operating with a self-managed, integrated operation from breeding through to shipment, rearing only pure Berkshire breed black pigs. The greatest appeal of Koedo Kurobuta is its finely-grained, moist meat quality and the elegant sweetness of the fat. Berkshire grows slowly — raised over approximately 250 days, about 2 months longer than standard pigs. This time-taking rearing finely refines the meat fibers and allows rich umami components to accumulate abundantly. Even after heating, juiciness is rarely lost — and the mellow richness that enters the mouth is a step apart from other porks. The commitment to the feed is also noteworthy. Eco-feed utilizing local ingredients — sweet potato (a famous Kawagoe specialty), bread crusts, processed milk from dairy processing, and more — is self-blended in accordance with the growth stage. Feed rice, non-GMO milo, and herbs are also combined — finishing the pork with a rich flavor free of off-odor. Furthermore, crystal-clear groundwater drawn from 100 meters underground from the Chichibu mountains is used as drinking water. No antibiotics or hormones are used at all from birth through to shipment — a thoroughgoing commitment to food safety. For those wanting to enjoy the umami of the meat to the fullest, thick-cut pork sauté or tonkatsu is recommended.
