Kyo-Tanba Kogen-ton (Kyoto-Tanba Highland Pork), based in Nantan City, Kyoto Prefecture and raised in the rich nature of the Tanba Highlands, is a brand pork in which Hiyoshi Farm Co., Ltd. has continued to hone quality over many years. The harsh natural environment of the Tanba Highlands — with its extreme temperature differences — draws out the pig’s inherent strength and umami. At the livestock farm boasting the largest scale in the Kinki region, the pigs are carefully raised over approximately 6 months. The farm operates a two-base system — a breeding farm in Nantan City and a fattening farm in Kyotanba Town — by continuing to strictly select parent pigs excellent in both reproductive capacity and meat quality through self-renewal, a steady supply of stable-quality brand pork is generated. The greatest commitment is in the finishing feed. By giving eco-feed (food recycling feed) blending 30%+ bread crumbs for 60+ days in the late fattening stage, the fat develops a natural sweetness — and elegant marbling-style intramuscular fat enters. The meat color is pale and vivid — when eaten, the juiciness that gently spreads in the mouth and the soft texture are the appeals. Having won the Minister of Agriculture, Forestry and Fisheries Award 3 times at the West Japan Pork Carcass Contest — a brand that has continued to receive high evaluation over many years at shows.
