Painubuta — meaning ‘Southern Pig’ in the Yaeyama dialect of Okinawa, and also known as Minami-no-Buta — is a rare island pork raised by Yaeyama Farm on Ishigaki Island. Sired by the indigenous Ryukyu Agu breed, the pigs are fed an original fermented feed made from the pulp of Ishigaki-grown pineapples, born of the farm’s own circular agriculture. The result is fine-textured, tender meat that stays remarkably juicy when cooked, with low-melting fat that dissolves on the tongue into an elegant sweetness. Rich in oleic acid, vitamin B1, and iron, only about 500 pigs are shipped each year. Savor it as shabu-shabu, or try the farm’s beloved Hamburg steak.
