Born from half a century of work by the ‘Pig Doctor’ — a rare pork from the foothills of Mt. Fuji that melts like chocolate
Ruibiton (LYB Pork) is a Japanese brand pork (meigara-buta) from Fujinomiya City, Shizuoka Prefecture, managed by Fuji Farm Service Agricultural Cooperative. Breed / crossbreeding: Landrace (L) × Middle Yorkshire (Y) × Berkshire (B).
Ruibiton is a rare brand pork raised amid the rich natural surroundings at the foot of Mt. Fuji in Fujinomiya City, Shizuoka Prefecture. It was created by veterinarian Kuwabara, a world authority on pig breeding and crossbreeding who is also known as the ‘Pig Doctor.’ Because it crosses three breeds — Landrace (L), Middle Yorkshire (Y), and Berkshire (B) — it is also called ‘LYB pork,’ and it was born after half a century of trial and error in breeding. The Middle Yorkshire in particular is a rare breed whose numbers in Japan once fell to the brink of extinction. The meat that inherits this bloodline is finely grained and tender, with an elegant sweetness in the lean meat itself.
Its greatest appeal is the low melting point of its fat. While the fat of a typical three-breed cross pig melts at around 38°C, Ruibiton’s melts at about 32°C — lower than body temperature — so the moment it enters the mouth it melts away like chocolate, spreading a moist umami and sweetness. Because the fat is light and not heavy, it is easy to enjoy even for those who are not fond of pork fat.
In rearing, the pigs are raised freely and without stress — without relying on antibiotics, pesticides, or genetically modified feed — in an environment blessed with the clear air and water of the Fuji foothills. Shipments are very limited at roughly 1,000 head per year, and the pork has drawn the attention of Michelin-starred chefs — a true hidden gem known only to those in the know.
To enjoy it, simple preparations such as steak or roast pork, which let the ingredient’s strength stand out as is, are recommended. Cook it just until the redness on the surface disappears, without overcooking, to fully savor the melting fat and delicate umami.
