A low fat melting point, rich marbling, and no off-odor — a supreme Agu.
Amazing Agu is a Japanese brand pork (meigara-buta) from Okinawa Prefecture, managed by Ryukyu Shiryo Co., Ltd.
Amazing Agu is a brand pork managed by Ryukyu Shiryo Co., Ltd., based in Urasoe City, Okinawa Prefecture. The premium meat quality unique to agu pigs carrying the blood of Okinawa’s indigenous variety ‘Agu’ is realized through devoted rearing using a designated compound feed.
The defining feature is the low fat melting point. The sweet fat melting at a temperature close to body temperature — the rich umami that spreads softly the moment it enters the mouth is an appeal — a smooth, elegant flavor like butter can be enjoyed — distinct from ordinary pork. Furthermore, with higher marbling — the balance of lean and fat is exquisite — in any preparation from grilling to steaming to braising, finishing as a highly satisfying dish. With minimal gaminess — outstanding compatibility with simple preparations making use of the ingredient’s flavor — the carefully drawn-out elegant flavor can be fully enjoyed just as it is.
The pigs are raised slowly to a shipping age of 240 days — approximately one month longer than standard pigs. This slow growth is precisely the secret producing the finely grained meat quality and deep flavor.
In Okinawa’s traditional preparation ‘rafute’ — the fat finishes silkily soft — compatibility with the rich sweet-savory seasoning stands out. In shabu-shabu — the elegant sweet fat dissolves into the broth — the quality of the ingredient can be felt directly. Annual shipments approximately 1,800 head — with high rarity — Amazing Agu supported by the passion and technique of rearing farmers allows experiencing the essential flavor of agu rooted in Okinawa’s food culture.
