Born of the nature of Omi and an original feed — a top-quality brand pork scented with Baumkuchen.

Kurao Pork (Baumkuchen-ton) is a Japanese brand pork (meigara-buta) from Hino Town, Gamo District, Shiga Prefecture, managed by Kurao Pork Co., Ltd. Breed / crossbreeding: Female (Landrace × Large White) × Duroc.

Kurao Pork (Baumkuchen-ton), nurtured in the rich nature of Hino Town, Gamo District, Shiga Prefecture, is an Omi brand pork that Kurao Pork Co., Ltd. has carefully finished over many years. The origin of the name lies in an original blend incorporating the trimmings of Baumkuchen provided by ‘Taneya’ — a long-established Shiga Prefecture confectionery shop. The defining feature of Kurao Pork is the commitment of blending Baumkuchen into a wheat-centered feed carefully manufactured at the self-owned factory — giving only high-quality feed that humans would find delicious when eaten.

In rearing, the pigs’ condition is carefully observed daily while minutely adjusting feed quantities — thoroughly maintaining a stress-free rearing environment in a clean, temperature-controlled barn. The pigs are raised slowly over 210–240 days, much longer than standard — drawing out the inherent umami and flavor of the meat to the maximum. Meat meticulously aged through this long-period fattening is finished to a top quality — beautifully marbled with finely grained marbling, and concentrated elegant sweetness and umami.

The melt-in-the-mouth feel of the fat is also excellent — the rich flavor can be savored to the fullest at the direct-management shabu-shabu restaurant, as well as in grilled and steamed preparations. The breed is LWD-type — Landrace and Large White crossed with Duroc — providing a base that readily develops umami. Brand regulations established in 2006 and trademark registration completed in 2011 — please do savor this accomplished brand pork that Omi is proud of.
