Biratori Kurobuta is a pure Berkshire black pig managed by Biratori Agricultural Cooperative in Biratori Town, Saru District, Hokkaido. Purebred pigs are imported directly from the United Kingdom, and the farm continues to raise them while forming its own family lines — a rare breed known for its commitment to maintaining pure bloodlines. With production limited to just one farm in all of Hokkaido, the rarity is one of its defining characteristics. The feed uses the designated compound ‘Biratori Pork,’ with barley added in the finishing stage to slowly draw out the rich depth of flavor and umami that only Berkshire can deliver. The texture created by the barley-derived sweetness and Berkshire’s characteristically fine-grained muscle fibers is distinctive — when placed in the mouth, the fat dissolves cleanly and quickly in a premium flavor experience. The fat itself is also rich in umami, with a refreshingly clean finish that never feels heavy. Raised over more than 240 days with an unhurried, meticulous approach, the genuine depth of pork flavor develops reliably over time. In a Farm HACCP-certified hygiene management system, annual production of approximately 1,000 head is intentionally kept small to maintain consistent quality. Locally available through JA Biratori as fresh cuts of loin, leg, and belly, as well as hamburger patties, and also accessible outside Hokkaido through online retailers.
