Kyushu Mochi Buta (Kyushu Springy Pork) is a brand pork consistently handled by Nikushitsu Kenkyuu Farm Co., Ltd. in Osaki Town, Soo District, Kagoshima Prefecture. In Kagoshima’s rich natural environment — a system of self-managing from breeding through fattening in one body is in place — cherishing each individual pig — the stable delivery of uniform quality pork is valued. The breed is a three-breed cross pig — Berkshire male combined with a female having Large Yorkshire and Landrace as parents. Carrying the blood of Berkshire — known for rich umami and deep flavor — the deeply complex richness and unique texture felt when eaten is born. Feed, health, and equipment management are each attended to with devoted consideration — a high hygiene standard is maintained by incorporating a two-site system separating breeding farm and fattening farm. By being shipped after the slow fattening period of 190–210 days of age — the umami is firmly concentrated throughout the entire meat over time — a defining characteristic.
