Akita Silk Pork is a brand pork produced, processed, and sold entirely in-house by Fukasawa Co., Ltd. in Yokote City, Akita Prefecture. The farm is located in a naturally rich rural area overlooking Mount Chokai — also known as the ‘Dewa Fuji’ — where pigs are raised in a healthy, spacious environment. At the company’s own farm, certified under the Zen-Noh Safety System, all staff are required to thoroughly clean themselves by showering or bathing before entering the barn, with work clothes and boots changed at each individual barn to prevent the introduction of pathogens — a rigorous disease prevention system that shuts out external contamination. This clean rearing environment is the essential foundation supporting the quality of Akita Silk Pork. In terms of rearing, ‘Jiyoso’ (a material incorporating wood vinegar, etc.) is added to the feed in the late fattening stage to support gut health, with production focused on raising healthy pigs. As a result of this rearing management, the meat has minimal characteristic off-odor and also has good shelf life. The breed is a three-breed cross — Large Yorkshire × Landrace sows with Duroc boars — and as the name ‘Silk’ suggests, a finely-grained lean is the hallmark. The fat is rich in alpha-linolenic acid, and with excellent moisture retention, the meat stays moist and tender even after cooking. Additive-free processed products such as ‘miso-marinated loin’ and ‘kakuni braised pork’ made at the HACCP-certified in-house processing plant are distributed nationwide through the official online shop and Yokote City’s furusato nozei program.
