Ruibiton is a rare brand pork from Fujinomiya, Shizuoka, at the foot of Mt. Fuji, created by a veterinarian known in Japan as the ‘Pig Doctor.’ A cross of Landrace, Middle Yorkshire, and Berkshire — hence its other name, LYB pork — it was perfected over half a century. Its fat melts at about 32°C, below body temperature, dissolving on the tongue like fine chocolate, while the fine-grained lean meat offers an elegant sweetness. Raised without antibiotics or GMO feed in the clear air and water of the Fuji foothills, only around 1,000 pigs ship each year, drawing Michelin-starred chefs. Enjoy it simply as steak or roast pork to savor its melting richness.
