The one brand we cover from Tottori is Daisen Ruby, an original prefectural cross of the Daisen Red Pig (Duroc), developed by the Tottori Prefecture Small Livestock Experiment Station, with a Berkshire sire. Named for its ruby-like red meat, it ships only around 800 head a year. Trademarked in 2011, it is raised by a small number of producers on hygienic farms in the natural setting of Mt. Daisen.
