Nichinan Mochi Buta (Nichinan Springy Pork), raised in the nature-rich environment of Nichinan City, Miyazaki Prefecture, is a brand pork consistently produced from breeding through shipping — with thoroughgoing strict hygiene management at an SPF (Specific Pathogen Free)-certified farm. At SPF certified farms, the use of antimicrobial drugs is minimized — with little concern for drug residue — highly evaluated as pork that can be put in the mouth with confidence by many meat industry professionals. The breed is a three-breed pig — Duroc male crossed with a sow born from Landrace × Large Yorkshire — realizing a meat quality characterized by firm lean and appropriate marbling. A dedicated feed blending 70–80% milo, wheat, and Miyazaki specialty kansho (sweet potato) is given in the late fattening period — this is the secret to drawing out the finely-grained, rich umami of Nichinan Mochi Buta. Furthermore, copra flakes (coconut oil cake) are also blended — the fat finishes taut yet with good mouthfeel — producing a juicy, smooth texture. The finished meat is rich yet without the characteristic pork off-odor — the aftertaste is clean, not tiring to eat. Softness is maintained even when cooled — also useful as a lunchbox side dish. A special carcass splitting technique is adopted — the shoulder-loin can be cut longer than standard, with good yield — also supported by restaurants as an easy-to-handle ingredient. Under the safe, reliable production system of Farm HACCP and JGAP obtained — approximately 12,000 head are carefully shipped annually from designated farms.
