Shizawa Pork Kome Shiage (Shizawa Pork Rice Finish) is a brand pork produced by Bright Pick Chiba Co., Ltd., based in Asahi City, Chiba Prefecture. Raised using a proprietary liquid feed manufactured in-house, the defining feature is a proprietary formulation centered on rice-based ingredients including feed rice. By actively incorporating feed rice, the fat acids derived from rice are reflected in the pig’s fat. As a result, the fat is white and finely-grained — a softness and mellow richness that seems to melt when it enters the mouth spreads. Minimal off-odor and an elegant fragrance are also appeals — a finish that tends to be accepted even by those who dislike pork. Fattening is carried out at Ioka Farm within Asahi City, with shipping age of 180 days and shipping weight 118 kg — raised more slowly than standard pigs. The breed is a three-breed cross (triple cross) — Large Yorkshire × Landrace sow crossed with Duroc male — a balanced type combining the deliciousness of the lean and the richness of fat. The rearing environment also provides confidence. Ioka Farm has obtained SQF (Safe Quality Food) certification — managed as a farm that has cleared international food safety standards. Farm HACCP is also in the process of being obtained at all farms — a thoroughgoing approach to hygiene. Slaughter is carried out at Chiba Prefecture Meat Corporation, with trademark registered in 2010 and brand standards set in 2009 — a brand with history and track record.
