Tsugaru Buta is a brand pork fully managed from insemination through to shipment by Kimura Farm Co., Ltd., based in Tsugaru City, Aomori Prefecture. The breed is Hypor (a three-breed cross), highly regarded domestically and internationally for its excellent balance of meat volume and meat quality. The feed is a proprietary eco-feed of the farm’s own design, incorporating 40% or more feed rice grown by contracted local Tsugaru farmers, combined with food recycling materials including apple pomace from Tsugaru’s apple pressing industry. Delivered through a liquid feeding system in a state optimized for easy digestion, this approach also actively contributes to reducing regional food loss. This feed design has a direct impact on meat quality — the content of glutamic acid, the umami component, is said to reach approximately twice that of standard pork. The pork is also rich in Vitamin B1 and oleic acid, earning broad support from consumers with interest in fatigue recovery and beauty. Raised slowly over 180 days, the resulting pork features a moist, tender lean with a clean, refined flavor — the fat carries a delicate sweetness with never a hint of heaviness. The farm holds Farm HACCP and JGAP certification, producing safe and reliable pork under thorough hygiene management. The farm also actively pursues circular agriculture, returning compost made from pig manure and local organic matter to local farmers. With approximately 33,000 head produced annually, the pork is distributed not only within Aomori Prefecture but also exported to overseas markets including Hong Kong.
