Hayama Kogen Ton is a three-breed cross pig raised with devoted care at ZEN-NOH-certified farms within Fukushima Prefecture. Pigs born from a cross of Landrace female × Large Yorkshire male mother sows with Duroc male are raised slowly over approximately 180 days to shipping. The key to enhancing meat quality is the dedicated finishing feed given for approximately 2 months before shipment. This feed — based primarily on grains such as corn and brown rice, and cassava, with the addition of natural tree extract, linseed oil, and perilla absorbed oil — stands out for its commitment to an entirely plant-based feed with absolutely no animal-derived ingredients. The natural tree extract has a deodorizing effect that softens the characteristic pork off-odor, while the linseed oil and perilla absorbed oil are rich in alpha-linolenic acid, an omega-3 fatty acid. These combined measures firmly suppress the gamey off-odor of pork while simultaneously achieving a soft, juicy meat quality and a clean, elegant fat. Furthermore, the practical feature of minimal scum even in braised preparations makes this pork excellent for shabu-shabu, kakuni braised pork, mabo tofu, and many more dishes with no extra effort.
